CUTTING & STORING CAKES
CUTTING STACKED CAKES 1) REMOVE all icing flowers, figurines, stars and hearts on wires or ornamentation that might be wrecked by moving and lifting the cake. 2) Run a knife around the inner board between the top layer and the middle layer - always start with the top layer first! 3) Lift the top layer straight upwards, removing any dowels that might be holding the top layer in place. 4) Place the top cake on the cutting board area, and set aside (if the top layer is being kept by the Bride and Groom), or cut into serving sizes. Remove the dowel supports from inside the cake and repeat 1-4 above for the next layer and any subsequent layer. CUTTING SEPARATED CAKES 1) REMOVE all icing flowers, figurines, stars and hearts on wires or ornamentation that might be wrecked by moving and lifting the cake.2) Carefully take apart each layer of cake, Cut and serve the layers that are required. for a laugh J click here: HOW NOT TO CUT A CAKE!!!
SERVING SIZES I dont EVER give approx serving sizes as that largely depends on the person cutting the cakes and how skillful they are, the city cake company website states serving sizes as - "20cm/8" serves 30, 25cm/10" serves 90, 25cm/10" 2 layers serves 120" – to achieve these servings you would have to be very skilled at cutting slivers of cake into exactly the right identical size. For this reason I feel I cannot give accurate serving proportions, just the approximate measurement of the cake ordered.
STORING CAKE: Everyone has different temperatures for their freezer so we do not have recommendations for storage times for customers for storing their cakes in the freezer. Storage conditions change from freezer to freezer, some smaller freezers may not keep a cake frozen at a low enough temperature to guarantee successful longevity, larger freezers may work well depending on their seals, where the cake is placed in the freezer is certainly a factor in preservation, whilst opening and closing the freezer door can change the temperature and drastically alter the storage life of a cake. Basically we recommend when wanting to store a cake in the freezer, to wrap it well with a plastic wrap, excluding as much air as possible, then freeze quickly, at the lowest part of the freezer, surrounded by water bottles that will freeze also, and keep the cake totally frozen at all times. To defrost, three days before cake is required, remove the frozen cake and all wrappings while cake is still frozen, and leave at room temperature. The cake should go very sticky and wet and then suddenly after a few days return to complete normality. We do not accept liability for cakes that have not stored well, once the cake has left our hands.STORING HANDMADE FIGURINES: Many people simply eat their figurines! Sugar attracts humidity so if you are planning to store your icing flowers and figurines you will need to coat them in clear spray varnish to prevent the moisture from getting to the icing. CHOCOLATE seashells and animals can be frozen until eaten. We do not give recommended times for storage as we simply do not know, much depends on where the figurines or chocolate is stored in the freezer, the temperature and how often the freezer is opened.
